A simple message header contains the basic address label of an email message. It only contains the most basic information including:
who the message is from
time-stamp of when the message was written
subject line indicating what the message is about
to whom the message was sent

An extended email header contains the Simple Mail Transfer Protocol (SMTP) information like where the email has been, who really sent it as well as the simple email header information. Where the email has been includes the host services that relayed the message from beginning to end.
